Trio of Chocolate Mousse Tart

 

Ingredients:

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 2-3 tbsp cold water

For the Chocolate Mousses:

  • 4 oz dark chocolate, finely chopped
  • 4 oz milk chocolate, finely chopped
  • 4 oz white chocolate, finely chopped
  • 3 cups heavy cream, divided
  • 3 tbsp sugar, divided
  • 3 tsp vanilla extract, divided

 

Instructions:

Prepare the Tart Crust:

  • Sift together flour and cocoa powder in a bowl. Mix in sugar.
  • Cut in the butter until the mixture resembles coarse crumbs.
  • Add egg yolk and water, and mix until the dough comes together.
  • Press the dough into a 23cm Aluminum tart pan, and refrigerate for 30 minutes.

Preheat Oven and Bake the Crust:

  • Preheat your oven to 350°F (175°C).
  • Bake the crust for 20-25 minutes. Let it cool completely.

Make the Dark Chocolate Mousse:

  • Melt dark chocolate over a double boiler. Let cool slightly.
  • Whip 1 cup of heavy cream with 1 tbsp sugar and 1 tsp vanilla until soft peaks form.
  • Fold in the melted chocolate. Spread this mousse over the tart crust. Refrigerate until set, about 30 minutes.

Make the Milk Chocolate Mousse:

  • Repeat the process with milk chocolate, another cup of heavy cream, 1 tbsp sugar, and 1 tsp vanilla.
  • Once the dark chocolate layer is set, gently spread the milk chocolate mousse over it. Refrigerate again.

Make the White Chocolate Mousse:

  • Repeat the process with white chocolate, the remaining cream, sugar, and vanilla.
  • After the milk chocolate layer has set, add the white chocolate mousse layer.

Chill the Tart:

  • Refrigerate the tart for at least 2 hours or until completely set.

Serve:

  • Garnish with chocolate shavings, strawberries, or cocoa powder before serving.
