Outydse Gemmer Tert (Old-Fashioned Ginger Tart)
Ingredients:
For the Crust:
- 1 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1 egg yolk
- 1-2 tbsp cold water
For the Filling:
- 1/2 cup unsalted butter, softened
- 1/2 cup dark brown sugar
- 1/4 cup golden syrup or molasses
- 1 cup heavy cream
- 2 large eggs, beaten
- 4 tbsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/4 cup crystallized ginger, finely chopped
For the Topping (optional):
- Whipped cream
- Additional crystallized ginger, for garnish
Instructions:
Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a food processor, combine flour and sugar. Add the butter and pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and 1 tbsp of water. Pulse until the dough just comes together, adding more water if necessary.
- Press the dough into a 23cm Aluminum tart pan, evenly covering the bottom and sides. Refrigerate for 30 minutes.
Bake the Crust:
- Prick the crust with a fork, then bake for 15-20 minutes until lightly golden. Remove from oven and let cool slightly.
Prepare the Filling:
- In a mixing bowl, cream together the butter and brown sugar until smooth. Stir in the golden syrup or molasses.
- Gradually mix in the heavy cream, followed by the beaten eggs.
- Add the ground ginger, cinnamon, nutmeg, salt, and crystallized ginger, mixing until well combined.
Assemble the Tart:
- Pour the filling into the pre-baked crust.
Bake the Tart:
- Bake for 30-35 minutes or until the filling is set but still slightly wobbly in the centre.
Cool and Serve:
- Let the tart cool completely. Serve at room temperature or chilled.
- If desired, top with whipped cream and garnish with additional crystallized ginger.
