Fig and Three Cheese Tart Recipe
Ingredients:
For the Crust:
- 1 1/4 cups all-purpose flour
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 2-3 tbsp ice water
For the Filling:
- 1 cup cottage cheese
- 1/2 cup blue cheese, crumbled
- 1/2 cup pecorino cheese, grated
- 2 large eggs
- 1/4 cup heavy cream
- 2 spring onions, finely chopped
- 1 tbsp fresh thyme leaves
- Salt and pepper to taste
For the Topping:
- 4-6 fresh figs, sliced
- Honey, for drizzling
- Extra thyme leaves for garnish
Instructions:
Prepare the Tart Crust:
- Preheat your oven to 375°F (190°C).
- In a bowl, combine flour and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water, stirring until the mixture forms a ball. Flatten into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Roll out the dough and press it into a 23cm aluminium tart pan. Refrigerate for another 15 minutes.
Bake the Crust:
- Line the crust with parchment paper and fill with pie weights or dried beans.
- Bake for 20 minutes, remove weights and parchment, and bake for another 10 minutes until golden. Let cool.
Make the Cheese Filling:
- In a bowl, combine cottage cheese, blue cheese, and pecorino cheese. Mix in eggs, heavy cream, spring onions, and thyme. Season with salt and pepper.
- Pour the filling into the cooled crust.
Bake the Tart:
- Bake for 25-30 minutes, or until the filling is set and slightly golden.
Add the Fig Topping:
- Arrange sliced figs on top of the baked tart.
- Drizzle with honey and garnish with extra thyme leaves.
Serve:
- Let the tart cool slightly before slicing.
- Serve warm or at room temperature.
