- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup heavy cream
For the Cherry Topping:

- 1 tbsp cornstarch
Instructions:
Prepare the Tart Crust:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.
- Add cold water, one tablespoon at a time, until the dough comes together.
- Press the dough into a 23cm Aluminum tart pan with a removable bottom. Refrigerate for 15 minutes.
- Bake for 15-20 minutes until lightly golden. Remove from oven and let cool.
Make the Cheese Custard Filling:
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually add the heavy cream, mixing until well combined.
- Pour the filling into the cooled crust.
Bake the Tart:
- Bake for 25-30 minutes, or until the filling is set but still slightly wobbly in the centre.
- Remove from the oven and let cool to room temperature, then refrigerate until chilled.
Prepare the Cherry Topping:
- In a small saucepan, mix the maraschino cherry syrup and cornstarch. Heat over medium heat, stirring constantly, until thickened.
- Add the halved cherries to the thickened syrup and stir gently.
Assemble the Tart:
- Once the tart is chilled, spoon the cherry topping over the custard filling, arranging the cherries evenly.
Serve:
- Serve the tart chilled, ideally a few hours after assembling to allow the flavours to meld together.
