Cheese and Custard Tart with Maraschino Cherries Recipe

 

Ingredients:

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1-2 tbsp cold water

For the Cheese Custard Filling:

  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream

For the Cherry Topping:

  • 1/2 cup maraschino cherries, drained and halved
  • 1/4 cup maraschino cherry syrup (from the jar)
  • 1 tbsp cornstarch

Instructions:

Prepare the Tart Crust:

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.
  • Add cold water, one tablespoon at a time, until the dough comes together.
  • Press the dough into a 23cm Aluminum tart pan with a removable bottom. Refrigerate for 15 minutes.
  • Bake for 15-20 minutes until lightly golden. Remove from oven and let cool.

Make the Cheese Custard Filling:

  • In a large bowl, beat the cream cheese and sugar until smooth.
  • Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
  • Gradually add the heavy cream, mixing until well combined.
  • Pour the filling into the cooled crust.

Bake the Tart:

  • Bake for 25-30 minutes, or until the filling is set but still slightly wobbly in the centre.
  • Remove from the oven and let cool to room temperature, then refrigerate until chilled.

Prepare the Cherry Topping:

  • In a small saucepan, mix the maraschino cherry syrup and cornstarch. Heat over medium heat, stirring constantly, until thickened.
  • Add the halved cherries to the thickened syrup and stir gently.

Assemble the Tart:

  • Once the tart is chilled, spoon the cherry topping over the custard filling, arranging the cherries evenly.

Serve:

  • Serve the tart chilled, ideally a few hours after assembling to allow the flavours to meld together.
